La Colomba, meaning “dove”, is the traditional Italian Easter cake, baked in the shape of a dove to signify peace, hope, and renewal. A light and fragrant leavened cake made with candied fruit.
This is a real artisan Colomba, made by master baker Beniamino and his daughters. They make the light aromatic dough using local honey and organic eggs, the dough is naturally leavened overnight using a 30-year-old mother yeast. Left to rise twice more, the final touch is a traditional crunchy almond glaze topping with whole nuts before the cakes are then ready to bake.
