La Colomba, meaning “dove”, is the traditional Italian Easter cake, baked in the shape of a dove to signify peace, hope, and renewal. A light and fragrant leavened cake made with candied fruit.

This is a real artisan Colomba, made by a master baker, Beniamino and his daughters have made a wonderful vegan version of the traditional Easter cake using sulphite-free candied fruit peel and vanilla pods to flavour the dough, which is naturally leavened using a 30-year-old mother yeast.

This delicious Colomba is perfect with your morning coffee, at teatime, or with a glass of dessert wine.
