A traditional Argentinian cheese accompaniment made from sweet potatoes with a delicate vanilla flavour.
Dulce de batata or doce de batata, as known in some parts of South America, is made by slow cooking mashed sweet potato with sugar, flavoured with vanilla essence and is then set to a jelly-like dessert. Unlike regular jelly, this has a firm texture and a soft bite to it.
It is usually served with cheese and nuts after dinner or in between meals as a small snack. It's excellent with crusty bread and a glass of good wine!
