This dark and thick honey is quite a distinctive honey with its sophisticated hint of bitterness or amaro, so prized by the Italian palate, is made from the nectar of spring-flowering sweet chestnut trees from Tuscany and Umbria, Italy. It is a tradition in Tuscany to combine chestnut honey with good pecorino cheese and pear.

For six generations Michele Olivia's family has bred indigenous Sicilian bees and harvested their honey from the wild flowering plants of the Iblei Mountains, in eastern Italy. Their skill and accumulated experience in traditional bee husbandry, cold extraction of the honey and the family pride in its excellence guarantee natural, raw honey of rare taste and quality.
