La Colomba, meaning “dove”, is the traditional Italian Easter cake, baked in a dove shape to symbolise peace, hope and renewal. Lightly leavened and fragrant, it is enriched with candied fruit for a soft, delicate texture.

This classic version from Vergani features traditional candied fruits and is finished with a crunchy topping of almonds and sugar.
