The Pai Mu Tan is a delicate white tea, consisting of a new bud and two new leaves. Also known as White Peony, in reference to the fine hairs on the young buds of the tea. Produced in the Zheng Huo county in the Fujian Province, China, the leaves and buds are left to dry in the sun, without any rolling so they remain intact.
When brewed Pai Mu tan has a pale cup with delicate fruit and floral notes and is bright and fresh.
