From early March the bees are busy collecting nectar in the perfumed citrus groves of southeastern Sicily to make this regional specialty, known locally as Zagara. Pale gold and quickly setting in cooler temperatures, this honey has a lovely delicate flavour.
This mild, thick, golden honey is ideal for sweetening drinks or baking.
The beehives are positioned on either wild or certified organic land, so worker bees can forage on pesticide-free flowers. This is better for hive health and us honey lovers.
