Willie's World Class Cacao discovered these beautiful Trinitario beans deep in the ancient San Augustin district, in the foothills of the Colombian Massifs. With their soft notes of dark cherries and damsons, this Willie's Colombian is slightly darker than the rest of the range at 88% cacao.
Everything is made in small batches which takes up to 21 days at low temperatures, compared to industrial chocolate which is made in a few hours.
